Cajun Jambalaya with Shrimp

Serves: 3

Ingredients:

  • 1 tbsp diced andouille sausage
  • 2 tbsp of mirepoix (diced onion,pepper,and celery)
  • 3/4 cup brown rice
  • 4 oz vegetable demi-glace ( 1/3 reduced vegetable stock for flavor fortification)
  • 3 oz shrimp
  • 1/4 cup tomatoes diced
  • 1/4 cup corn
  • 1 tsp tabasco sauce (for heat)
  • 1 tbsp sliced green onion

Directions:

  1. In a large pan, sauté onion, corn, tomatoes, mirepoix and sausage, about 5 minutes.
  2. Add the demi-glace, tabasco sauce, and shrimp. Let cook for about 5 minutes.
  3. Add the raw rice, stir and lower heat. Let simmer and stir every few minutes until the rice is fully cooked.
  4. Serve immediately.
